The Sustainable AgriFood & Ingredient Innovation (SAFII) labs at North Dakota State University (NDSU) is dedicated to advancing U.S. grown plant-based functional food ingredients, with a particular focus on plant proteins, dietary fibers, resistant starch, lipids, and natural antioxidants using both conventional and advanced processing techniques. Our goal is to create plant-based, functional, nutritious, and sustainable food ingredients and products while supporting environmental balance and long-term economic resilience.
